When Pink Goes Green: The Facts on Energy Wasted Through Food.

Here is a surprising average, 2% of our national energy consumption will be thrown away in our trash cans. That’s the equivalent of 350 million barrels of oil. Consider what it takes to get a head of broccoli from a seed, farmer nurturing plant till harvest, harvest, the gasoliine used for transportation from farm to middleman, from middleman to store, from store to your house. From that point, the amount of food that we purchase and let spoil in our refrigerators, and then toss out, is twice, that is 2 times the amount of energy that Switzerland will use in one year. The amount of food that we throw out is more than the energy that we produce in ethanol in one year.

With that in mind, you might consider making my Veggie Pesto recipe, top of my recipe page. Freeze it, and use it. It will dramatically cut down on veggies that you throw away. Then you will be set for making great meals using vegetables that are awesome for fighting cancer! Fresh food is good, but frozen can be just as healthy for your body, and for our environment!
